After about 10 years of baking, Shalini Padmanabhan, 44, of Ma Bakers fame (popular for her muffins, breads and more), has now opened an outlet in the heart of Anna Nagar. Piece of Cake, her two-week-old bakery near Anna Nagar Roundtana (just below cafe Latte), stocks baked treats varying from brownies and cookies to muffins, cakes and desserts with a variety of fresh breads too. “We’re looking at introducing smaller loaves of bread — of about four slices each — for those who don’t want to store for long,” says Padmanabhan, who has been baking since she was 12.
She claims her USP lies in creating healthier treats. “We use a lot of fruits, wheat bases and reduce sugar as well. And when we say 70 per cent wheat, you can be sure there’s 70 per cent wheat in the bread,” she says. And judging by her customers who come to Anna Nagar from other parts of town, we don’t have to take her word for it. “Our cakes and muffins are made to order and a lot of people come to us for gluten free products,” she adds. Her approximately centralised kitchen, located in the same premises as her store, comes to life at around 7:30 am and you can stop by at around 10 am for the fresh stock of the day. Of course, all her special breads (no salt, no sugar, fig and date, spinach bread, etc) will have to be ordered in advance, with no restriction on a minimum order.
Among the healthy indulgences she offers are zero-sugar muffins and breads, whole wheat and 70 per cent wheat breads. The muffins are available in gluten free versions like apple, dates and banana, and for the dessert hunters, we suggest her cheesecakes, tiramisu and mousses. Those who like their biscotti have three options to choose from — pistachio cranberry, almond and chocolate with hazelnut (available in eggless variants as well) and we suggest you also give her energy bars (muesli bars) a try.
