Meet the man behind Pling, a Kerala-based brand, which hopes to redefine authentic Indian snacks in the global market

THINK global, stay local. Thatai??i??s the business mantra adopted by city-based serial entrepreneur Andrine Mendez, while making a career shift from advertising to the food and beverage industry. ai???Through networking events, I met several like-minded FMCG entrepreneurs and thatai??i??s how the idea took shape. Three weeks ago after investing close to Rs 30 lakh, we launched Pling. Itai??i??s anAi?? Indian snack brand that is completely based out of Kerala and supports the local farmers in Wayanad,ai??? explains Mendez, whose previous advertising venture was acquiredAi?? by Links Group (France). The first Pling products to hit the market are banana crisps ai??i?? which are a healthier alternative to potato chips, as they are fried in rice bran oil. Pling is available in variants like peri-peri, pani puri as well as sour cream and onion.
        Poised to grow

ai???Millenials everywhere want to experiment when it comes to the indulgent snackingAi?? category.Ai?? This is why our vibrant packagingai??i??which doesnai??i??t even feature a product shot ai??i?? is aimed at the global snack tooth,ai??? explains the 30-year-old branding expert via a VoIP call, as heai??i??s currently in Ireland preparing for Plingai??i??s European launch.

According to the Protein Foods and Nutrition Development Association of India, the national snack food industry is estimated at about $3 billion (more than Rs 10,000 crore) and growing rapidly at 20 per cent. While Pling is hoping to compete with brands like Haldiram and Bikanerwala, beverage start-ups like Paperboat are also about to venture into the ethnic snacks market. Even big players like Coco Cola have launched badam and kesar milk products. ai???We will always have a Kerala connect, in fact, our next products are jackfruit, apple and peanut-based. Pling also plans to launch across Europe in March 2017. ai???Weai??i??ve been chosen by American retail chain Supervalu via their global Food Academy program, and our products will hit over 220 Supervalu stores across Europe,ai??? says Mendez.

Italianoai??i??s desi fusion fare, at pocket-friendly prices, will have you coming back for more

Italiano, the new vegetarian restaurant in the hub of Anna Nagar, is easily noticeable to passersby. As we entered, we were greeted by Divya Pesala, co-owner of the restaurant, who introduced herself as a self-taught chef and former Visual Communications student. Unlike many other Italian restaurants in the city, Divya claims that Italiano brings its own twist to the table. ai???We donai??i??t serve authentic Italian food. Even people who donai??i??t fancy the cuisine will like the food at Italiano, as it is a fusion of Indian and Italian flavours. Our aim is to satisfy everyoneai??i??s taste buds.ai???

The 18-seater restaurant is a cosy place with a dAi??cor that shouts out food. Calling it a start-up venture, Pesala who curated the menu says she wanted to keep it short and simple with a choice of all her best dishes. First, we were introduced to the ongoing best seller, the Italian bhel, a dish made of in-house fried pasta tossed in Indo-Italian syrup (jaggery, herbs, chilli powder) with vegetables and mayonnaise. With a sweet and chilli kick, the crispy strings were in equal parts tangy and creamy.

Pesala says that the restaurant has already become a hangout spot for many youngsters who enjoy revisiting, courtesy its pocket-friendly prices and quick bites-style menu. We sampled the Veggie Salad, which reminded us of salads from Subway. Itai??i??s highlight is Pesalaai??i??s special herb dressing, in the form of jelly replacing the meat and egg, which is usually part of an regular Subway salad. We were also treated to Pesalaai??i??s signature dishai??i??baby corn fritters, served with chipotle and mayonnaise sauce.

The restaurantai??i??s version of mac and cheese balls failed to make an impression though, and sadly lacked seasoning. Our favourite was the Italian pizzaai??i??thin crusted and topped with exotic vegetables like zucchini, olives and baby corn, this one is value for your money. As we concluded the meal and prepared to say our ciaos, Pesala let on that she also plans to start an outdoor catering menu, which will also include lasagnas and desserts like tiramisu.

Roll into the Asian StationAi?? and sip on a steam engine?

Thereai??i??s a mocktail at the Asian Station called the Steam-Engine. Itai??i??s a blend of cranberry, orange and masala chai. But oddly enough, the reason we like it so much is not what goes into it, but rather what comes out. Its rightly christened name should give you a hint. Served up in a olive oil-vinegar holder re-purposed as drinking glass, you can chug-chug through one spout while dramatic wisps of smoke ascend from the otherai??i??thanks to the predictably tense marriage of dry ice and hot water.

            Unlikely cargo
So that was our unconventional hello as we rolled into this week-old restaurant. Located at Shanthi Colony, Anna Nagar, the 105-seater space is as expansive as it menu, serving flavours from Thailand, Japan, Vietnam, Myanmar and, of course, China. ai???I can eat Chinese morning, noon and night. Itai??i??s what inspired this restaurant,ai??? says foodie Rohan Ahuja who is all of 25 years old. With a family background in pharma and no hospitality experience whatsoever, this restaurant is a passion project. If you think thatai??i??s a bit extreme, chew on this: ai???My brother actually flew fried rice and chilli chicken from Chennai to Germany when he came to visit me once!ai??? recalls Rahul Ahuja, who co-runs the restaurant.

Asian kuli Order zenegra alkem paniyaram?
With substantial portions and pricing that is easy on digestion, thereai??i??s little not to like about this new restaurant on the block. We were a little disappointed that their live teppanyaki and sushi section was not open just yet, but the brothers promise it should be up and running by Wednesday. However, classics like a Burmese khao-suey and an Oriental twist
on the traditional kuli paniyaram got us over the disappointment pretty quickly. Definitely worth a mention are the brightly coloured interiors that perk you up just as much as the generous room for parking.

Cheap nasonex nasal spray What to look forward to on the food front during the ongoing music season

CELEBRATED for its diverse yet adept rasikas, the season of Margazhi is a proud bearer of an earnest audience. Having said that, the very rasikas are some of the most astute connoisseurs of delectable food, as they are of Carnatic music. As Chennaiai??i??s favourite season is underway, six canteen services speak to us about their sumptuous offerings.

Krishna Bhavan, a part of the well-known Sri Krishna Sweets, is looking at serving their signature picks at the Sabha for the sixth consecutive time. Sri Parthasarathy Swami Sabha

Keeping in mind the emerging health-conscious crowd, rasikas will see the Mountbatten Mani Iyer Catering service go organic this December. From ragi idiyappam and thinai (foxtail millet) pongal to karuppatti (palm jaggery) paniyaram and panakarkandu (palm sugar) milk, Mount Sreenivasanai??i??s range is a balanced mix of nutrition and variety. Apart from the usual fix of dosas and elai saapadu, rare native sweets like suryakala and chandrakala (fried dough pockets of guava and dried-fruit stuffing shaped in the form of the sun and the crescent moon) will be served. ai???In a time where international cuisine is a clear front-runner, we wanted to bring back our homegrown favourites,ai??? says Sreenivasan, who has been serving the Parthasarathy Sabha for the past six years.

                Indian Fine Arts

Known fondly for its decks of flavoured dosas, Venus Catering Services is looking to stick to their unwavering favourites this season. While Venus promises a menu change every day, paneer masala, gobi manchurian and millet are a definite part of their dosa range, we are told. ai???About four years back, noted musician K J Yesudas came to our canteen just to taste our rava dosa with his entire family. Following his concert, he headed straight to our stall. ai???Moments like these are why we do this,ai??? reminisces owner V M Sankar, who has been behind the sabhaai??i??s eatery for 28 years. Having served at the Mylapore Fine Arts for over 15 years, S Baskaran of Meenambiga Caterers has been running the service that he inherited from his grandfather, for almost two decades now. Known for their whacky recipe of the double-decker idli (which comprises of a spicy onion chutney sandwiched between layers of batter), inventing offbeat dishes is anything but new for Baskaran. Mini-balls kozhakattai (spiced tiny rice dumplings), which comes in flavours of lemon and veggies, are their special for this season. ai???There have been times where we have dumped
a few batches because we werenai??i??t satisfied with the taste. Providing quality food to the rasikas is our only motive,ai???

If there is one thing that Mint Padmanabhan is known for, it is his menuai??i??s eclectic palate. ai???Having served in the Music Academy for ten years, we take immense pride in not repeating any dish in the menu during the course of Margazhi,ai??? says the 62-year-old, who set up the service in 1975. While their rice menu offers the likes of coriander, mint and curry leaves (karuvepillai) rice, their tiffin platter consists of Guntur idli (idli sprinkled with Andhra spiced gun powder and oil), and mor kali (buttermilk and rice flour) apart from dosas, parottas and pongal.

Huggi, an Udupi style pongal, which is made with a base of fried moong dal and rice with a dash of crushed condiments and dried coconut, is their special for this year. Contrary to the other sabhas, the 70-year-old caterer believes in maintaining the same menu to please the crowds, with bisi bele bath being their trademark. ai???It might not be a difficult dish to master. But details as small as boiling the rice along with the dal, as opposed to boiling it separately, makes our version stand out,ai??? he says with a smile. The band members of Metallica try and decipher whoai??i??s who on the cover of their new album, Hardwired… to Self-Destruct

IN the eight years since their last studio album Death Magnetic, Metallica has been inducted into the Rock and Roll Hall of Fame, headlined The Big Four tour with Slayer, Megadeth and Anthrax, made the album Lulu with Lou Reed, celebrated a 30th anniversary, launched the Orion Music + More fest, starred in the 3D movie Through the Never, and became the first band to play in all seven continents in a calendar year. James Hetfield, Lars Ulrich, Kirk Hammett and Robert Trujillo chat about their new double album release, Hardwired… to Self-Destruct.

How did the albumai??i??s title track come about?
KH In this day and age, basically everything you do gets recorded. Thereai??i??s this scene… At every sound check, rehearsal, every jam, every warm-up, in the tuning room, on the road ai??i?? everything is recorded. James is prolific every time he picks up a guitar, thereai??i??s one great riff after another. We first started to listen to all the stuff since Death Magnetic. There were 1,500 ideas that were literally locked. A couple of summers ago, I started listing those ideas, and read out what I thought were good starting places. JH Hardwired is where Death Magnetic left off, with the track My apocalypse. It just hits you, and this album does the same thing. The album has that intense epic vibe. LU Hardwired was the last song to be written. With all the stuff put together in 18 songs, we thought we needed something that said, ai???Hello!ai??i?? This song was the last to be written and the first to be put out thereAi?? ai??i?? and probably the most different of all the songs out there. KH We were basically done with the record, when we realised, there was no opening song. We just put it together, to the point of James saying, ai???No five-minute epic acoustic intro. Just hit them with the first punch. Hit them with the first song.ai??i??

Lyrically, there is a loner vibe to the track, Atlas, Rise! Metal has, kind of, been the music for the loner.
Is loneliness something you guys always identified with?
LU For me, that will never change. Whether itai??i??s the Deep Purple, Black Sabbath and Led Zeppelin generation, or whether itai??i??s Iron Maiden, Judas Priest, MotAi??rhead, Saxon, and fill in all the rest of ai??i??em. We will always be a fan of those generations, because it was what we grew up with, it was what made us who we are, itai??i??s in our DNA. I will always be a fan of that music. Thirty five years later, no matter what Metallica hasAi?? become, that hasnai??i??t changed. KH Iai??i??m still a fan of that period that Lars just talked about ai??i?? the ai??i??70 and early ai??i??80s. Iai??i??ve been so influenced by the music from back then. Now, as a working musician for 40 years or so, that period of music has become a point of reference. When I need inspiration or even information, I go to that time period, and I feel like a fan. JH I like what you said about the ai???lonerai??i?? thing. Thereai??i??s a part of me that loves being a loner ai??i?? just loves it, craves it, and that whole lone-wolf attitude. Itai??i??s just so comforting. But then, the other side of that is, Iai??i??ve got the weight of the world on me, I have to do everything myself. Iai??i??m a martyr now, and I become a victim, and all that. So youai??i??re right about the loner part and the responsibility around it.

What were the origins of the albumai??i??s artwork? Cheap eulexin medication
LU We met these guys four to five years ago. When Jess (his wife, model Jessica Miller) and I got hitched up in the mountains, we asked them to come up and shoot the wedding. For a wedding present, they gave us this crazy picture of the two of us superimposed on each other, and we were like, this is awesome. I showed it to James and said, ai???One day, when we do something in the future, we should get these guys to do all of us on top of each other.ai??i?? Three years later, they shot all of us doing that crazy superimposed stuff, in the same place. We gave the pictures to David Turner, who has done all our artwork for the last 10 years. We didnai??i??t know it was gonna be that cool. The images are striking, and different from anything we have done before. KH It was so powerful, it was a total no-brainer. In Central America, there was this massive poster of that image, and James was like, ai???Look, itai??i??s your face on the cover!ai??i?? And, Iai??i??m like, ai???No, thatai??i??s not my face, thatai??i??s your eyebrow.ai??i??
                  RT Wait a minute, thatai??i??s Kirkai??i??s nose. No, thatai??i??s you…LU I know, thatai??i??s my tongue. Thatai??i??s all I know for sure.

What made Spit out the bone the albumai??i??s final track?
KH It was all a blur. The song didnai??i??t become the closure until Hardwired became the opener. RT Spit out the bone is my favourite song, it has personality. Jamesai??i?? vocals brought that song together. It was a wild roller coaster ride. It was like a bass break and in the end, it blossomed.
KH Itai??i??s a fine line when you go on that kind of a journey. If all the pieces fit, youai??i??re in a great place, and if they donai??i??t, you know itai??i??s a riff tape, and people will say, what are these guys thinking? When it works, itai??i??s magic.
