After two trips to Le Cordon Bleu, London, Samriddhi Gupta presents Tutto Dolce and a selection of fine pastries
Though she did her under graduation in entrepreneurship at the Babson College in the US, and returned to work in her family business (power generation), Samriddhi Gupta’s interest in cooking did not fizzle out. “I applied to culinary school in London purely out of passion,” says Gupta, who took up a four-month course at Le Cordon Bleu in 2012. “The course was on desserts and pastries and the teaching is more technique-based than about dishes,” recalls Gupta, whose first memory of baking was when she baked a batch of cheese scones in the fifth grade. “Each session lasts about three hours and you learn to be in the kitchen for that long, besides things like cleaning up before and after,” she smiles.
The urge to take her baking skills beyond friends and family struck Gupta earlier this year and she decided to start Tutto Dolce, to bake and sell fine pastries from her home in RA Puram. “But there are so many people baking in the city and I wanted to start something that I could turn into a store eventually,” says Gupta, adding, “so I took up another course on plating and decorating earlier this year.” Since her second stint at Le Cordon Bleu, Gupta has been making indulgences like chocolate pavlova with berries, profiteroles, cheesecakes and lemon loaves. Ask her about her most exquisite offerings and Gupta names her dark chocolate pavlova, that uses a 56 per cent (or more) Belgian dark chocolate.
For the gluten intolerant
And while she also creates unusual cakes like her chocolate olive oil cake with almond flour, Gupta, like most home bakers in the city, has a set of healthy offerings too. On her Facebook menu, we find vegan oat bars, whole wheat cinnamon spice cake and vegan and gluten-free orange chocolate cake. “I also do carrot cake, gluten-free cookies and muffins too,” says Gupta, who requests a minimum of two days notice on orders. Currently working on increasing her line-up of healthy offerings, Gupta is also looking at doing citron and plain fruit flavours.
