WITH flavours from yesteryear royal kitchens now the rage—thanks to workshops, festivals, et al—The Gateway Hotel IT Expressway is getting on board with a Mughal bonanza. Buzz, the all-day diner, is showcasing the exquisite tastes of Mughlai food. At the helm is chef Santosh Kumar of Jhankar, the North Indian restaurant at The Gateway Hotel, Agra. With 20 years of experience, he has prepared his signatures for heavyweight political figures like Prime Minister Narendra Modi and Varun Gandhi.
Being held in the city for the first time, the Mughlai fest will be counting on the city’s familiarity with biryani and its soft spot for the use of dry fruits and nuts in its curries. “We have prepared a menu with dishes that once used to be the favourites of the Mughal emperors. You can expect signature kebabs like the galawat ke kebab, mukti kebab and anjeer ke kebab. Among gravies, do not miss the murgh shahjahani, shahi kaju aloo and the mutton nihari gosht. I also expect the Mughlai mutton stew to be a hit,” insists Kumar, who along with Sanjay Agarwal, the executive chef of The Gateway Hotel, Agra, prepared this menu. But if you are in the mood for a quick fix and a filling meal at the same time, they recommend the gosht dum biryani. Desserts include shahi tukra and kesariya phirni.
